Pineapple Raita (Vegetarian)
- 32 oz. Plain Yogurt
- 8 oz. Diced Pineapple in Juice drained
- 2 oz. Shelled Pomegranate Seeds
- 1 oz. Chopped Cilantro
- 1 oz. Grated Fresh Ginger
- 1 oz. Finely Chopped Fresh Jalapeno Pepper
- 2 oz. Toasted and Ground Cumin Seeds
- 1/2 oz. Salt
Whisk Yogurt. Add all the above ingredients except Pomegranate Seeds, and reserve a few pieces of diced pineapple for garnish.
Transfer Raita to bowl, hold cold for service.
Just before service, garnish with Pomegranate seeds and a few pieces of diced pineapple.
